Imagined, designed and built a restaurant that quickly became a community anchor

Transformed an old church into an internationally renowned restaurant and creative studio.

Designed, built and launched restaurant that featured local, seasonal and organic fare, with a brick oven as the cornerstone of the menu. Design included two fireplaces (one with a waterfall running down the chimney,) an exterior water feature that resembled a dilapidated Roman ruin, garden patio dining area, local artwork, recycled materials, copper counters and bar, handcrafted tables and stage, and an antique piano, a collection of unique vintage chandeliers.

Engineered menu to ensure profitability, minimize waste and captivate patrons with interesting and delicious choices.

Designed kitchen and front of the house to maximize table count, seating capacity, and the ability to turn tables. Because kitchen efficiency is critical to smooth operations, design supported flow from front and back of the house.

Established operating systems and procedures to support seamless service––from food coming out of the kitchen perfectly to closing out a check at the end of a meal.

Set up relationships with vendors, trained staff and empowered them to embody the restaurant’s brand essence.

Hosted events and engaged in public relations and marketing, thereby cultivating a loyal clientele and attracting local, national and international acclaim.
